Le riz collant ne contient pas d'amylose, mais à sa place des molécules fortement ramifiées à poids moléculaires bas et moyens. Le degré de ramification de l'amidon du riz collant se trouve entre celui de l'amylopectine ordinaire et celui du glycogène.
