Risk-benefit analysis of fish consumption indicates the benefits of farming of tuna to improve quality

The benefits of long-chain omega-3 PUFA in fish is well known though this has to be balanced against the presence of polychlorinated biphenyls, dioxins, and mercury. Blue fin tuna is not the richest source of omega-3 acids but it is a widely consumed dietary source of fish. It is shown in this paper that rapid lipid accumulation during a period of farming results in a net reduction in mercury concentration and further that selected tissue cuts contain more lipid and less mercury. Farming therefore has the potential to improve fish quality. /fg
