✦ Synopsis
The term phenolics covers about 8000 natural compounds all containing one or more phenolic hydroxy groups and some times also a carboxyl group. Examples include flavonoids, stilbenes, and tannins. They may react in three ways to exhibit antioxidant behaviour: by hydrogen atom transfer, by single electron transfer, or by chelation of transition metals and these are discussed in this review.
