Enrichment of lecithin with omega-3 acids by acidolysis using immobilised phospholipase A1
Lecitase Ultra, immobilised on Duolite A568 resin, was used to promote the acidolysis of lecithin using a concentrate of fish oil acids containing EPA, DPA, and DHA (78.4 mol%). Optimum conditions were: substrate ratio 1:8 (lecithin:fatty acids), 24-hour reaction time at 50 and 608C. Under these conditions the modified lecithin contained nearly 35% of these omega-3 acids.
