Abstract
Esterase extracts obtained from four varieties of common wheat were analysed by the gel electrofocusing method using pH 5 to 8 carrier ampholyte; 17 esterase fractions were obtained. No varietal difference was observed in the zymograms of all the varieties examined. Using the criteria adopted for animal esterases, the separated multiple forms were then characterised on the basis of their substrate and inhibitor specificity.
Evidence obtained from these studies indicated that these enzymes belong to aliesterases or esterases B (3. 1.1. 1) and can be considered as belonging to isoenzymic systems.
