✦ Synopsis


The statistical thermodynamics of lipid mixtures is discussed with particular reference to solutions of triglycerides in polar and non-polar solvents. Perturbation theory is used to estimate the importance of different types of electrostatic interactions to the total free energy of mixing, and the connection with corresponding states theory, Flory-Huggins theory and regular solution theory is established. Upper critical solution temperatures for lipid mixtures containing acetonitrile and nitromethane are analysed. It is suggested that a triglyceride molecule be regarded as a necklace of independent polar and non-polar segments.
