## Abstract **BACKGROUND:** Firmness in vegetables is an important textural attribute affecting consumer attitudes toward freshness and quality. Firmness, structural carbohydrates, polygalacturonase (PG), and pectin methylesterase (PME) activity were measured in three onion (__Allium cepa__ L.) lin
