Abstract
Methodology using micellar electrokinetic capillary chromatography (MECC) to determine 5βhydroxymethylβ2βfuraldehyde (HMF) as a degradation product of carbohydrates in aged and thermal treated honey is described. Sodium dodecyl sulfate was employed as the anion surfactant in a phosphate buffer, pH 7.5. The sample preparation was limited to dissolution of honey in water and addition of an internal standard solution (2βfurylmethylketone). The method was highly selective and exhibited high reporducibility, accuracy, and short analysis time.

A method for the determination of 2-furaldehyde (F) and Shydroxymethyl-2-furaldehyde (HMF) in beer by liquid chromatography (LC) is described. The method is based on the formation of the 2,4-dinitrophenylhydrazones of carbonyl compounds and subsequent reversed-phase separation of these derivatives.
