Abstract

Methodology using micellar electrokinetic capillary chromatography (MECC) to determine 5‐hydroxymethyl‐2‐furaldehyde (HMF) as a degradation product of carbohydrates in aged and thermal treated honey is described. Sodium dodecyl sulfate was employed as the anion surfactant in a phosphate buffer, pH 7.5. The sample preparation was limited to dissolution of honey in water and addition of an internal standard solution (2‐furylmethylketone). The method was highly selective and exhibited high reporducibility, accuracy, and short analysis time.
