A method for the determination of 2-furaldehyde (F) and Shydroxymethyl-2-furaldehyde (HMF) in beer by liquid chromatography (LC) is described. ## Abstract Methodology using micellar electrokinetic capillary chromatography (MECC) to determine 5‐hydroxymethyl‐2‐furaldehyde (HMF) as a degradation product of carbohydrates in aged and thermal treated honey is described. Sodium dodecyl sulfate was employed as the anion surfactant in a phosphate
