Abstract

Bird cherry (Prunus padus) anthocyanins were extracted with acidified methanol, fractionated by column chromatography on Toyopearl HW40(S) and purified in a C‐18 Sep‐Pak cartridge. The pigment composition was very simple, as there were only two compounds. The anthocyanins cyanidin‐3‐rutinoside (60%) and cyanidin‐3‐glucoside (40%) were determined using chromatographic and spectroscopic methods.
