## Abstract Bird cherry (__Prunus padus__) anthocyanins were extracted with acidified methanol, fractionated by column chromatography on Toyopearl HW40(S) and purified in a C‐18 Sep‐Pak cartridge. The pigment composition was very simple, as there were only two compounds. The anthocyanins cyanidin‐3
