## Abstract Maize, wheat, amaranth, rice and soybean were screened for protein content. Alcoholβsoluble (A1 and A2) and glutelin (G1 and G2) fractions were isolated and compared in terms of their amino acid and protein compositions. The average proportions of nitrogen content between total alcoholβ

## Abstract Quantitative amino acid composition of acid hydrolysates was determined for samples of some Polish varieties of cereal grain (wheat, rye, barley, oats, millet and buckwheat) and oilseed (rapeseed, sunflower, poppy and soybean). Comparison of investigated genera was done.
## Abstract In experiments with rats the amino acid digestibility of three protein concntrates (soya bean meal, herring meal, horse bean meal) was measured when these protein sources were given separately and together with cereal grains (barley, maize, oats or wheat). True digestibility of the indi
