## Abstract In wäßrigem Medium wird durch β‐Mercaptoäthanol die Löslichkeit von schwefelsäuregefälltem Casein erhöht; unter gleichen Bedingungen kommt es bei sprühgetrocknetem Ackerbohnenproteinisolat zu keiner Löslichkeitsveränderung. Ackerbohnenprotein‐Casein(1: 1)‐Fasern haben zwischen pH 5,5 u
