Abstract

The concentration of vitamin C in individual tomatoes shows considerable variation from fruit to fruit. Average values indicate that ripe fruits arc richer in vitamin C than unripe fruits and that outdoor grown tomatoes are richer than those grown in greenhouses; no significant differences occurred between the varieties studied. Some of the individual fruits analysed in 1945 were found to contain a comparatively high concentration of dehydroascorbic acid.
