✦ Synopsis

ered by extraction, and the recovery ratio, which can be defined as follows:

x -Y X Recovery ratio = -x 100 where X is the mean amount of the acid content and Y is the mean amount of the acid recovered per hundred gram.

The recovering factor equal 90% for the three samples of molasses. The obtained numerical value proves the ef& ciency of the applied technical process.

Molasses of the three Egyptian districts contain between 5-6% aconitic acid, which can be considered relatively high, com ared with the other molasses produced in other countries .

According to this process, we can produce 1.25 tons of aconitic acid from about 250 000 tons of the annual produc-tionofEgyptianmolasses,ifonly5% ofaconiticacidisrecovered. Such an amount is of great value if practical demands of aconitic acid are considered. Another advantage of this process is that the arrangement of the apparatus allows the recovery of ethyl acetate solvent, which can be used again in the extraction process.

## Abstract The action of trypsin on the reserve proteins of the leguminous seeds belonging to __Vicieae__ and __Phaseoleae__ tribes was investigated. The hydrolysis of 11S and 7S proteins of __Vicieae__ proceeds relatively fast and some of the proteins are hydrolyzed practically completely. The hy
