โœฆ Synopsis


The proximate compositions of several cultivars of chickpea, white bean, lentil, broad bean, and soybean were determined. The variability in mineral and phytate contents within legume cultivars and the effect of soaking and cooking treatments on the retention of minerals and phytate were also determined. The mineral elements studied were Ca, Cu, Fe, Mg, Mn, P, K, Na, and Zn. Soaking and cooking treatments resulted in a significant (P < 0.05) loss of minerals and a significant (P < 0.05) reduction in phytate for most of the legume cultivate in this study.
