โœฆ Synopsis

Physical properties of sunflower seeds and kernels were evaluated as a function of moisture content . At 6 ะธ 2% m . c . d . b ., the average length , width , thickness and unit mass of the seed were 9 ะธ 52 mm , 5 ะธ 12 mm , 3 ะธ 27 mm and 0 ะธ 049 g respectively . Corresponding values for the kernel were 8 ะธ 28 mm , 4 ะธ 09 mm , 2 ะธ 43 mm and 0 ะธ 034 g . The mean equivalent diameter and sphericity of the seed were 5 ะธ 39 mm and 0 ะธ 57 respectively , while corresponding values for the kernel were 4 ะธ 32 mm and 0 ะธ 53 . In the moisture range from 4 -20% d . b ., the bulk density of the rewetted seed decreased from 462 to 434 kg / m 3 , true density in- creased from 706 to 765 kg / m 3 , porosity increased from 34 ะธ 3 to 43 ะธ 3% and terminal velocity increased from 5 ะธ 8 to 7 ะธ 6 m / s . For the kernel the corresponding values changed from 574 to 628 kg / m 3 , 1050 to 1250 kg / m 3 , 45 ะธ 4 to 50 ะธ 2% and 3 ะธ 5 -5 ะธ 8 m / s . In the same moisture range the static coef ficient of friction varied from 0 ะธ 40 to 0 ะธ 58 for seed and from 0 ะธ 43 to 0 ะธ 81 for kernel on dif ferent surfaces , while the angle of respose varied from 34 to 41 ะŠ for seed and 27 to 38 ะŠ for kernel .

The study was undertaken to determine the physical properties of guna seeds as a function of moisture content. The seeds tend to be #at and oval in shape. At the moisture content of 4)7% d.b., measurements yielded an average 1000 seed weight of 0)041 kg, major axis of 8)80 mm, intermediate axis of 5

The ability of 2S albumins from sunflower seeds to stabilize oil-in-water emulsions has been investigated, demonstrating that one of the proteins (SFA8) effectively stabilizes emulsions, while another (SF-LTP) does not stabilize emulsions. The surface tension and surface dilation viscosity of these
