Lipids extracted from salmon heads by commercial proteolytic enzymes
Lipids were recovered from salmon heads by solvent extraction (21.5%) or by proteolysis using 'Alcalase', 'Neutrase', and 'Protamex' at 60ยฐC for two hours with the last giving the highest oil recovery (19.6%). The extracts were analysed for component phospholipids and for the fatty acids of the polar and neutral lipids. The former are particularly rich in EPA (10%) and DHA (33%). Marine lecithin extracted from fish heads immediately after filleting is a valuable source of LC-PUFA much sought after by the food, nutraceutical and cosmetics industries.
