RezensionedBook Reviews oxidative stress by physical exercise and measurement of oxidative stress in humans. It further surveys the role of nutrition, particularly of the potential health benefits of antioxidative vitamins, carotenoids, flavonoids and dietary fiber and natural anticarcinogenic compounds like lignans, isoflavonoids and chlorophyllin, in the prevention of these degenerative diseases. Due to the importance of selenium for human health its intake and status is separately discussed. The final part of the volume deals with the possible health risks to the consumer caused by contamination of diet with heavy metals and organic pollutants like polychlorinated biphenyls (PCBs), organochlorine pesticides (OCPs) and polycyclic aromatic hydrocarbons (PAHs).

The book can be recommended to medical, biomedical, biochemical, nutritional and food scientists to get a quick insight into the current state of this multidisciplinary research field.
