Abstract
A colorimetric method of estimating fat peroxides in materials such as animal tissues has been developed, which is free from interference by phospholipids. The peroxides are reduced with ferrous chloride in benzeneβmethanol solution and the amount of ferric iron produced is determined by the addition of 2 : 6βdichlorophenolindophenol and pyroβphosphoric acid. The extent of phospholipid interference with the ferric thiocyanate method of peroxide estimation has been measured by comparison with the new method. This interference has been found on the whole appreciable owing to the solubility of phospholipids in solvents used for fat extraction.
