β¦ Synopsis
The productivity of the continuous production of fructooligosaccharides from sucrose was investigated by fructosyltransferase immobilized onto a high-porous ion exchange resin was optimal with 600 g sucrose/l at a flow rate of 2.7 h-' expressed as a superficial space velocity When the column was operated at 50 'e , about 8% loss of the initial activity of immobilized enzyme was observed after 30 days continuous operation, achieving high productivity of 1174 g/l l h.

A technique to produce high-content fructo-oligosaccharides by the mixed-enzyme system of fructosyltransferase and glucose oxidase was investigated. The mixed-enzyme reaction was carried out in a stirred tank reactor containing 40 %(w/v) sucrose with 10 unit of fructosyltransferase and 10 unit of gl
The study had mainly investigated the synthesis of sucrose-6-acetate (s-6-a) in fructosyltransferase action. The synthesis reaction of s-6-a was performed between sucrose and glucose-6-acetate (g-6-a), and identified by high performance liquid chromatography (HPLC). According to the reaction of s-6-
