## Abstract Mixtures of fully hydrogenated canola oil and high‐oleic sunflower oil were interesterified chemically and enzymatically with sodium methoxide and __Candida antarctica__ lipase, respectively. Polymorphic behavior and crystal morphology of the10–100% blends before and after interesterifi
