## Abstract Structural and physicochemical characteristics of mesquite gum (from __Prosopis velutina)__ were investigated using FT‐IR spectroscopic, mass spectrometric and chromatographic methods. Four fractions (F‐I, F‐IIa, F‐IIb and F‐III) were isolated by hydrophobic interaction chromatography.
