Carotenoids were determined by high-performance liquid chromatography (HPLC) and ascorbic acid (AA) by the official method of the Association of Official Analytical Chemists (AOAC) in cashew apple products found on the market of Campinas, Brazil. The following products, concentrated juice, frozen pu
