Abstract

Changes in protein solubility, amino nitrogen and activity of proteases in bovine pancreas frozen at โˆ’70 and โˆ’18ยฐC after soaking in various aqueous glycerol solutions were studied. Reduction of freezing temperature causes decrease of value in all studied parameters. Additionally, an inhibitory effect of glycerol on protease activity was demonstrated.
