One hundred and fifty lactic acid bacteria (LAB) isolated from vacuum-packaged processed meats werc screened for antagonistic activity against various food spoilage microorganisms and foodborne pathogens. Nineteen strains produced bacteriocins active against closely related LAB and Lisreriu strains.
