β¦ Synopsis
The effect of yeast-cell state on the rate and yield of ethanol synthesis in semicontinuous and continuous fermentation of carbohydrates was investigated in order to increase the ethanol production rates and to obtain ethanol yields close to theoretically calculated values.
Differences between the initiation of ethanol synthesis in cells of the single-cell state and of the budding-cell state were obtained. It could be shown that it is advantageous to switch to anaerobic conditions for ethanol production when yeast cells enter the budding-cell state during aerobic cultivation.
Thus, by considering cell-state distribution of yeast population the specific ethanol production rate and the total ethanol yield could be improved in continuous sucrose fermentation by Saccharo-
