The progress of the solid state acyl shift of 1,2-diglycerides to 1,3-diglyeerides is followed at room temperature in single dipalmitin microcrystals by electron diffraction. The #'form, rather than the a-form of the 1,2-isomer, transforms to the 1,3 product. The #' form packs in the monoclinic paraffin fashion, i.e. the Oยฑ methylene subeell and a chain tilt of 27* about the long subcell axis. After the isomerization, the chain tilt (14" to surface normal) occurs around the b s axis of the resultant Tll methylene subcell.

Intensity data from glycerol dipalmitate single crystal electron diffraction patterns are used in a crystallographic analysis of the aliphatic chain packing in the a-form of the diglyceride. The phasing model based on a free methylene rotor gives a good fit to the observed data.
