Abstract
Particle‐size distribution in samples of endosperm starch from six types of wheat was determined by microsieving. The size distribution of two of these samples and of six others was analysed automatically by the Coulter Counter and Quantimet. The results indicate that more than one‐third of the total weight of starch is contributed by granules with diameters less than 10 μm. This value exceeds, by a wide margin, the proportion generally attributed to granules of this size.
