Abstract
A lecture given to students explaining the position of a Chemist in a Flour Mill, his relationship with the managerial and operating staff, purchasing departments and sales departments. In addition to the laboratory work, first hand experience must be obtaincd of the milling processes and of the consumer trades. In addition to the normal chemical examination of products, physical (rheological) methods are used for measuring dough characteristics. Vitamins and trace elements become routine practice in a flour mill laboratory, and the routine running of the mill flow can be checked by laboratory tests and experimental milling. Thorough research into the milling processes is advocated.
