โœฆ Synopsis

By studying the changes in refractive index, viscosity, absorption in the UV, infra-red patterns, iodine value, and peroxide values using hydriodic acid side by side with other methods which occur during the autoxidation of the methyl esters of corn oil fatty acids at 40ยฐ C, it is shown that Wheeler's method is undependable, while the other methods using potassium iodide give only figures for the labile peroxides (hydroperoxides). The use of hydriodic acid give the total peroxides. It is stated that hydriodic acid does not react with the normal constituents of fats, while it is possible that it re8acts with the conjugated bonds under the conditions of the experiment as shown in text.

## Abstract A model system was used to study the pattern of rancidity in linoleic acid and corn oil using the TBA method. It was shown that malonaldehyde is not a stable end product of rancidity and therefore, the TBA test is not a reliable means of quantitative feasurement of degree of rancidity i
