The structure determination of triglycerides by RP HPLC is discussed, and theimportanceof temperatureand mobile phase composition demonstrated. The formation of brominated triglycerides followed by RP HPLC analysis allows rapid determination of cocoa butter equivalents (CBE) in cocoa butter and chocolate products.
