โœฆ Synopsis

Ethyl formate undergoes spontaneous autocatalytic hydrolysis via water catalyzed (neutral), as well as hydrogen-ion catalyzed mechanisms. The activation parameters for the neutral reaction are โŒฌH โ€ก ฯญ 91 ฯฎ 8 kJ/mol and โŒฌS โ€ก ฯญ ฯช48 ฯฎ 8 J K ฯช1 /mol. This result is in contrast to the values reported in the hydrolyses of the more polar activated haloesters. The specific rate of neutral hydrolysis of ethyl acetate can also be predicted.

The breakdown of soy peptides by two strains of Prevotella ruminicola was studied. The percentage degradation by P ruminicola 23 was 30ร‰8% (^0ร‰6) and that by S17/3 was 14ร‰3% (^4ร‰0). Separation of the peptides by HPLC showed that the 2รˆ3 kDa fraction decreased greatly during the course of fermentatio
