Journal of Food Composition and Analysis (JFCA) has been produced as a contribution to the United Nations International Year of the Potato (IYP) 2008. It provides, fi rst, a comprehensive review of articles on potatoes published in the Journal over the past two decades, as well as studies from other sources, bringing together an invaluable consolidated literature for those seeking greater insight into potato nutrition issues. The issue then presents 19 papers that provide the most recent original analysis of a range of scientifi c topics of interest to nutritionists, potato experts, food technologists, and regulatory specialists. It is hoped that the information and technical data presented in this publication will provide guidance to scientists in both the public and private sectors, as well as to government and institutional policy-and decision-makers.
