## Abstract Volatile free fatty acids (VFFA) were isolated from Bulgarian sour milk and with the help of gaschromatography were identified and quantified the acetic, propionic, butyric, isovalerianic, valerianic, caproic, caprylic and capric acids that participate in the aroma complex formation. V
