Plant sterols (phytosterols) are a group of compounds structurally very similar to cholesterol (Fig. ). The main plant sterols, sitosterol and campesterol differ from the structure of cholesterol by an ethyl and a methyl group, respectively, at C-24 in the side chain. These small differences have a
