✦ Synopsis
In this paper a review is given about the most important lipase-producing yeasts as well as the yield of lipase production. In order t o find out the optimal conditione for lipase production by yeasts, it is necessary to investigate the influence of the main factors affecting Iipase synthesis such aa carbon and nitrogen sources, activators and inhibitors, interface-affecting agents, temperature, pH and inoculum. Besides the yield of lipase as an efficiency factor of fermentation and the substrate specificity of lipase, playing an important role in applications, are described.
