Plasma fatty acid profile and prooxidative-antioxidative parameters in vegetarians

Fatty acid profile in plasma was examined in 12 adult vegetarians (lacto and lacto-ovo) aged 41 -63 years with an average period of vegetarian nutrition of 9.8 years. Difference in the content of saturated and monounsaturated fatty acids in vegetarians was insignificant (compared to non-vegetarians). Positive factor of vegetarian nutritional habit with respect to atherosclerosis included significantly elevated content of linoleic acid (C 18 : 2) and linolenic acid (C 18 : 3). as well as unchanged or only slightly reduced content of polyunsaturated fatty acids -arachidonic acid (C 20 : 4) and docosahexaenoic acid (C 22 : 6, n = 3). Favourable values of prooxidative-antioxidative parameters (significantly reduced content of conjugated dienes of fatty acids in plasma, significantly higher plasma levels of vitamin C, b-carotene, vitamin E/cholesterol -indicator of LDL protection and vitamin E/triacylglycerolsindicator of fatty acid protection) demonstrated a reduced risk of lipoperoxidation in vegetarians.

Zusammenfassung

Plasma FettsCureprofil und prooxidativ-antioxidative Parameter von Vegetariern Es wird das Fettsaureprofil im Plasma von 12 erwachsenen Vegetariern (Lacto-und Lacto-Ovo-) im Alter von 41 bis 63 Jahren bestimmt, die sich durchschnittlich 9,s Jahre vegetarisch ernahrt haben. Zwischen Vegetariern und Nichtvegetariern werden keine signifikanten Unterschiede der Gehalte an gesiittigten und monoungesattigten Fettsluren nachgewiesen. Als positiver Faktor der vegetarischen Ernahrung beziiglich Atherosklerose werden signifikant erhohte Werte an Linolsiure (C 18 : 2) und Linolensaure (C 18 : 3) ermittelt, ferner ein unveriinderter oder nur schwach reduzierter Gehalt an den polyungesittigten Fettsauren Arachidonsiure (C 20 : 4) und Docosahexaenslure (C 22 : 6, n = 3). Werte, die den prooxidativ/antioxidativen Zustand charakterisieren wie signifikant reduzierte konjugierte Diene der Fettsauren im Plasma und signifikant hohere Vitamin Cund a-Carotinwerte, das Vitamin E/Cholesterolverhiltnis -ein Indikdtor fur den LDL-Schutz und das Vitamin E/Triacylglycerolverhaltnis als Zeichen des Fettsaureschutz -sind beim Vegetarier gunstiger und demonstrieren gegeniiber den Nichtvegetariern ein verringertes Risiko der Lipoxidation.
