The rate of NADH formation decreases significantly over a period of 20 h. The coupling of a reaction rapidly consuming NADH (Scheme 1) increases the rate and stabilizes the reaction, even over a longer period of time. The coupled reaction was the reduction of pyruvate to L-lactate (catalyzed by L-LD
