The monosaccharide compositions of parenchyma cell walls of raw and cooked corms of taro, Colocasia esculenta cv Tausala Pink, were determined. The cell wall constituents were sequentially extracted using CDTA, Na 2 CO 3 , 1M KOH, 4 M KOH and water to leave a ยฎnal residue (a-cellulose). The monosacc

โฆ Synopsis
Lehua and Bun-long (Chinese) variety taro corms and Hawaiian breadfruits were collected from major production sites in Hawaii. The macro-and micronutrients were analyzed and statistically compared. The Bun-long taro has signi"cantly (p(0.05) higher protein, ash and macro-mineral contents when compared to Lehua taro and breadfruit. The dietary "ber content in both taro varieties is higher than USDA data for taro. Breadfruit has signi"cantly lower "ber content but is higher in vitamin C than the two taro varieties. The monosaccharides, glucose and fructose, are signi"cant in breadfruit but not in taro corms.

The main component of the taro corm is starch but appreciable quantities of water-soluble mucilage are also present. Taro mucilage was cold-water extracted and puriรผed by dispersion and hydrolysis of starch, removal of starch hydrolysate and unconjugated protein. Compositional analysis of puriรผed co
