Abstract

The effect of oven‐drying on the reducing and non‐reducing sugars and on fructosan in asparagus, kale leaves and in five herbage grasses has been investigated. Values for total sugars in the dried material mere lower than in the fresh, while fructosan was higher in the dried samples.
