Abstract
Lowβtemperature diffusion of sugar beets at 40Β° has many advantages compared with the hot diffusion process (70β80Β°). The juice prepared in the cold process contains less proteins than that from the hot process and the pulp obtained is of better quality, has a higher nutritional value and its quantity is larger. In this paper a chromatographic study was made of both juices, especially in connexion with the nitrogen compounds present. In order to retain all the advantages connected with the cold diffusion process in the application of continuous diffusion, it is necessary to avoid any pressing effect on the cossettes.
