Abstract
The solubility pattern of phytates, chlorogenic acid and protein in sunflower seed meal is used as basis for the preparation of a protein concentrate low in the first two ingredients. Single step extraction (water as solvent) at pH value of 4.6 and solvent:meal ratio of 10:1 results in 84.1%, 58.4% und 19.2%, respectively. Four successive extractions, each at the same solvent : meal ratio and pH, results in 99.9%, 98.5% and 21.6% solubilities. respectively. Countercurrent extraction at a solvent:meal ratio of 15:1 and pH 4.6 results in 86.9%, 96.6% and 22.9% solubilities, respectively.
The study also reveals that single step extraction of sunflower seed meal, cottonseed meal and rice bran meal at pH value of 4.6 or 4.8 results in total phytate solubility of 82% or more.
