✦ Synopsis
Fifty random samples of Kashar cheese were collected from shops in different localities in Erzurum, all contained moulds. Mean count of total surface mould was 3.02 x lO'O/g cheese and that of inner mould was 3.02 x 103/g cheese. The genera Penicillium, Aspergillus, Mucor, Rhizopus and Geotrichum sp. were isolated from cheese samples. Aflatoxins were not detected in cheese samples. Potassium sorbate inhibited mould growth and sporulation in YES broth. The public health importance and economic significance of fungal contamination, and suggested measure for cheese quality are discussed.
Zusammenfassung
Pilz-Kontamination von Kashar-Kase in der Tiirkei Es werden 50 zufallige Proben von Kashar-Kase in verschiedenen Geschaften in Erzurum gekauft; alle enthalten Schimmelpilze. Der mittlere Gehalt an Gesamt-Oberflachen-Pilzkeimen betragt 3,02. IO'O/g Kise und derjenige an Pilzkeimen im Inneren 3,02. 103/g Kgse. Von den Kaseproben wcrden die Arten Penicillium, Aspergillus, Mucor, Rhizopus und Geotrichum sp. isoliert. Aflatoxine werden in den Kiseproben nicht nachgewiesen. Kaliumsorbat hemmt das Pilzwachstum und die Sporulation in YES-Medium. Die Bedeutung fur die offentliche Gesundheit und okonomische Gesichtspuukte der Pilzkontamination sowie Fragen zur Messung der Kasequalitat werden diskutiert.
