Three enzymes of flavonoid biosynthesis (phenylalanine ammonia-lyase (PAL), chalcone isomerase (CHI) and glycosyltransferase (UFGT)) were assayed during the development of apple (Malus purnila Mill) fruit. Total flavonoid and anthocyanin concentrations were measured (by HPLC) during the same period.
