✦ Synopsis


Abstract

Microbial enzymes are today used in a range of lipid processing from refining through to fat modification. The range of options is increasing following new research into enzyme types and functionalities. Within the near future, improved methods of enzymatic degumming will be developed as well as alternative enzymes for interesterification and synthesis of nutritionally interesting fats. An enzymatic route to Biod‐diesel is also a distinct possibility focussing on the waste oils and fats which are today difficult to process through chemical esterification.
