✦ Synopsis


Use of alkaline protease (subtilisin) gave nearly full extraction of nettle leaf protein (over 90?6). The difference of molecular seaving profdes of enzyme and without enzyme extracted protein fractions is not so remarcable. That signifys that enzyme extraction doesn't concern protein by it self but cell membrane. The added enzyme acts by weakening the cell membrane. The enzyme extracted fractions have favourable functional properties.
