In this study, we propose __F__~2~βselective 2D NMR spectroscopy as an effective method to obtain highβquality spectra of minor components in complex foodstuffs. Selective excitation along the __F__~2~ axis overcame the problems occurring in the conventional __F__~1~βselective 2D NMR spectroscopy. T
