โฆ Synopsis
The shape of the temperature profile curve of ethanol production changes in the presence of ethanol. So the characteristic points of the curve are shifted to lower values at increasing ethanol concentrations. As a reason for it the potentiation of thermal deactivation effects by ethanol already at lower temperatures is assumed. Compared to it, the activation energy of ethanol formation in the suboptimal temperature range was found to be unaffected by alcohol.

The ethanol-inhibitory behaviour of the yeast Sacchammyces cerevi&ze S c 5 was found to be characterized by a continual-linear relation between the specific ethanol formation rate and the ethanol concentration. Therefore the simple equation v = v,,a. P could be applied for it. It is shown that this
Two maturity stages of commercially grown tomatoes (breaker and mature green) were exposed to ethanol vapour (2 ml ethanol kg ร1 fruit) for 6 h at 20 ยฐC prior to storage at 5 ยฐC and 20 ยฐC. During storage the colour, ยฎrmness and composition changes were examined every 3 and 7 days. The results showed
The e โ ect of the ethanol extract from Saturejae hortensis L on the oxidative and thermal processes occurring in sunรower oil during its hightemperature treatment (180ยกC) was investigated. The changes during simulated deep fat frying were monitored by determination of the oxidation stability at 100ยก
