Dietary intake of fat and development of fatty infiltration of the liver are important factors in the pathogenesis of alcoholic hepatitis and cirrhosis. The degree of fatty infiltration found on liver biopsy in alcoholic patients is a risk factor for subsequent development of cirrhosis. 1 A principal mechanism for development of alcoholic liver disease is formation of reactive oxygen radicals and lipid peroxidation. A correlation between lipid peroxidation, indicated by ethane in the breath, correlates with the quantity of alcohol ingestion and severity of steatosis in alcoholic patients.
